The Lockdown – Day 26: The Midweek Special

15th April 2020 – Wednesday

I’m feeling a bit better today. I think I am learning to stress less about the things I can’t control and believe in the notion that everything will be ok … it’s got to be ok right?

I kept myself busy today and again spent the day in the kitchen. The kids started off with some home schooling, then in the afternoon the weather was so nice so the kids did some arts and crafts in the garden. Skye created a poster to stick in our window. It was an ode to the NHS and our keyworkers. She wanted to show love and support to them all. It was really bright and colourful and so cute!

I also made this drink called a Dalgona coffee. I’ve seen this coffee all over the internet and everyone is going mad for it. It’s basically a posh iced coffee. You just whip up sugar with coffee granules until it is thick and frothy, fill a glass with some milk and ice then place the frothy coffee on top. Did it live up to expectations? For me … not really. I am not a coffee drinker in the first instance so I didn’t find it particularly pleasant and it was so sweet. My hubby liked it but he said it wasn’t sweet enough … he thought a dollop of condensed milk would make it even tastier. The thought of it is making my teeth hurt.

For dinner I made a Vietnamese curry. This is a light curry made with chicken wings, potatoes and coconut milk. This is one of my go to recipes when I can’t think of what to make for dinner. We ate it with a side of scallion pancakes … that’s spring onions to you and me. Scallion pancakes are flaky and so more-ish … a great side dish to a great curry.

I had tickets to a concert for May 3rd. Me and an old friend were off to watch Jagged Edge in concert. I was super excited. I don’t normally like concerts because the thought of being in a crowd really sends my anxiety levels through the roof … but I was being brave and though you know what .. Jagged Edge are one of my favourite groups and I will bravely overcome my anxiety just for them. The Apollo Eventim venue is small anyway so I think I would have been ok. Anyway, I got an email today and it stated that the concert had been re-scheduled for November the 8th. I’m not sure if I’m still going to it in November … my friend wants to see how things go in the next couple of months. He’s sceptical that the economy will take a turn for the worse and the concert may just get cancelled altogether. We will see closer to the time I guess.

Oh, and the hubby went to Tesco’s for the first time today since the lockdown.

We don’t shop in the supermarket as you know because I am a vulnerable customer and so I can get my groceries delivered to me. But he popped out to get a couple of things so he braved our local Tesco supermarket. This is the first time he has stepped into the supermarket since the lockdown and he said it was so weird. You can only walk in one direction. You can’t go back on your self … 2 metre distance. Hubby didn’t know you were not allowed to go back on yourself and he was quickly told off for flaunting the rules. He said alot of the shelves were empty and it looked like one of those scenes out of a movie … where people had ransacked the shelves leaving nothing behind but dust. It made him feel uncomfortable. He said the supermarket wasn’t busy anyhow so he grabbed his bits and quickly came home.

The weather is going to be lovely tomorrow … so a BBQ may be in order.
